Asian-Style Baby Back Ribs

This is our take on Southern style ribs and Chinese take-out ribs. When I was a kid I banged out the Chinese take-out ribs by the hundreds. I was alway amazed at the allure of these ribs as they were typically dry and not very meaty. At some point, I became fascinated with Southern-style ribs, particularly Memphis dry-rubs. So, in our version, we have incorporated a hickory smoke, a Memphis dry-rub and a secret Chinese mop.
